Winemaking
2025 was a vintage where patience was rewarded. Spring's warm weather created ideal growing conditions and abundant crop loads, which we carefully reduced to enhance fruit quality. January's cool temperatures extended the fruit ripening period, enhancing pallet weight and aromatic intensity. Benefiting from ideal weather, we commenced harvest in mid-March, methodically working block by block as each reached optimal conditions. The Bull Paddock Vineyard is located only minutes from our winery, which allows us to minimise skin contact before pressing, capturing all the expressive fruit flavours and aromas. After harvesting, the grapes were gently pressed before individual parcels were batch fermented in stainless steel, using a selection of yeast strains chosen to give palate weight.

"The 2025 Bull Paddock Sauvignon Blanc leads with passion fruit and cabbage, freshly cut guava, pineapple, green apple and layers of thiol funk. This is pronounced and concentrated and is a typical character of the growing area: Dillons Point, at the mouth of the river to the ocean at the opening of the Wairau Valley. This is a mouthful of wine, to say the very least, with very little restraint; however, there are legions that would insist this is exactly "what the doctor ordered" when it comes to Marlborough Sauvignon Blanc."
